dave the brewer

I have homebrewed on and off from 1990 to today. I am a brewer because I take cereal grains, yeast water and hops and help turn them into a fermented beverage. While this seems complicated, it has been going on for hundreds and even thousands of years.

I use a cooler mash tun setup with a keggle and burner for outdoor brewing. During the winter I use a Mash and Boil System.

In 1990 my friends and I homebrewed using the Complete Joy of Homebrewing by Charles Papazian book that we all used (before the web) and my favorite recipe was Toadspit Stout. We brewed dozens of batches and even a Mead from 1990-1994. I brewed occasionally at a Brew on Premises place in Lincoln Park in 1997- 98.

During my travels from 1990 I travelled the world experiencing traditional beers in their country of origin. Then, visited craft breweries throughout the country to experience the American interpretation of these styles.

In March of 2020, I began brewing again after I completed my basement and bar(that I built by hand). I had a Guiness Stout tap that I had to put to use. I brewed over 14 batches of stouts and entered my "Every Day's a Holiday" Stout in the 2021 AHA Homebrewing Competition for American Stouts.

I have a wide range of skills that can be used in brewing and promoting beer. First, I created this website by hand using HTML. No fancy tool, just HTML. I also created the logo using my Photoshop and Illustrator skills that I refined while teaching Graphic Design and Digital Media. I also know various programming languages such as Python which would be helpful in data analysis. I also like to work with my hands. My renewed interest in beer and brewing happened because I completed building my basement and bar, entirely by myself. I hooked up a tap and Nitrogen line for my two stout taps. One tap is from Ireland, directly from Guinness. I used old oak flooring to create a custom bar. I am in the process of completing a brewing/laundry room.

I enjoy to cook. It is very common for me to smoke a brisket while brewing a batch of beer. I also have a number of Austrian and German recipes such as Schnizel with homemade Spaetzle and the best Apple Strudel in the US. I like brewing new variations of flavors just as I do when I cook, grill or bake.

Before teaching I was a computer consultant for CSC, an international company. I was sent on projects all over the world, which is how I was able to experience so many beers across the world and US. As a consultant, I had to learn a new industry quickly. These included a 911 System, Cellular Phone System, First Digital Phone System, programmed sorters for Payless Shoesource, became and expert in E-Commerce systems (Open Market) that predated Paypal. I was also a Unix system administrator and network administrator. I was forced to troubleshoot systems 24/7 and developed the ability to work under pressure and solve issues.

I would like to work in beer production and learn the process of commercial brewing. I would be happy to clean, can, deliver, drive, build, serve, work fests and anything that will help me learn about brewing, selling and serving excellent craft beer. As a teacher I have summers off and can be flexible with my schedule to accommodate the brewery.
